Salmon & Creamy Leeks in a Parcel


This is my go to meal for something simple, fresh and delicious.

This is also really good for a party or gathering as you can prepare the parcels beforehand and cook them all in the oven at the same time and it doesn't even take a long time to cook!

It also looks really presentable if you take just a little effort when prepping them!

Ingredients (For 2)

2 pieces of skinless salmon (your choice of size and cut)

2 leeks (just the white portion)

200-250ml cream

3 waxy potatoes

Fresh Dill

Lemon juice and zest

Freshly cracked black pepper & Salt

Directions

Slice the potatoes really thinly. I did it with a knife but the easier way would be to just use a mandolin. Set aside.

Slice the leeks thinly as well.

In a frying pan, add some oil and saute the sliced leeks until soft and slightly caramelized.

Add in an appropriate amount of cream - keeping in mind that the cream will thickened and reduce over time. So be generous.

Add salt and pepper to taste. Set aside.

Prepare a long sheet of parchment paper. Remember that you have to fold it in half so be generous.

Place the thinly sliced potatoes, making sure they overlap each other.

Then spoon the creamy leek mixture over it.

Place your salmon slice(s) over the bed of creamy leeks.

And for the final touch, sprinkle lemon zest and fresh dill all over like the pic above or a nice big sprig like the one below.

It will look as pretty as a painting!

Then close the parcel by folding and crimping the edges together. It doesn't have to look too neat and tidy. Just make sure that it is tightly closed so that the steam gets trapped inside.

Serve with fresh lemon wedges. Enjoy!

I had some left over potatoes, so i tossed them in some oil and baked them too!
