Niku Udon (Stir-fried Beef Udon)


Niku Udon is super delicious. It's basically just fried beef on a hot, light bowl of udon soup. This is a fairly quick recipe since i don't make everything from scratch. The beef on top of the noodles are rich and decadent. If it's too rich, just mix it into the soup and it instantly lightens things up. The beef is also good on top of japanese rice aka Gyudon.

Ingredients (For 1-2)

250g Shabu Shabu Beef (I used beef short plate, but any will do)

1 onion, sliced into wedges

Mirin

Soy Sauce

*I don't have the exact measurements for the sauces - Just start with a tablespoon each first and go from there. Add more mirin if you like it sweet, it should have a good amount of sweetness and more soy sauce if you need it to be saltier. I'll try to update the measurements the next time i make this.

Directions

Add just very very little oil.

Fry the onions till the soft and brown.

Add beef. Let it get a little brown.

Add mirin and soy sauce.

Taste taste taste.

It will become very rich and oily.

I use frozen udon noodles. Cook that separately in a pot of boiling water.

For soup, just use any dashi soup base. My favourite is this Kikkoman one. It's called "hontsuyu kaori shirodashi". It's concentrated, so follow the instructions to dilute. The ratio is about 1:6, but i usually do add a little more water.
