Butterball Cookies

This cookie looked too cute, i just had to make it. Plus, it's a really simple recipe. Very low chance of failure.

Ingredients

Cookie

260g plain flour

225g butter

100g white granulated sugar

1/2 tsp salt

1 tsp vanilla extract

Garnish

100g white granulated sugar

Filling

1/2 cup raspberry jam

Directions

In your electric mixer, using your paddle attachment, beat the butter till smooth and creamy.

Beat in the vanilla extract, flour and salt. Mix well.

Trying to ensure the same size, i weighed each ball (10g). Place the balls of dough on a baking pan lined with cling film and place in the freezer for a minimum of 30 mins. This helps to main its really round and cute shape.

There is a size limitation as to how big a tray i can fit in my freezer, so at this point, it doesn't matter, as long as the balls don't touch each other, you can transfer it to another baking tray.

When you're about ready to carry on baking, preheat the oven to 190 degree Celsius. Transfer the balls to another baking tray and the rest back into the freezer.

Bake for 12 minutes, till the sides are barely browned. Mine is a little more.. but it tastes perfectly delicious.

Have the 1/2 cup of sugar ready.

Place the cookies on a wire rack. Let it cool a bit so that you can handle it.

Coat each cookie generously with sugar.

Let it cool.

Assemble the cookies. Get ready your jam.

Choose cookies that are of similar size, dust off the excess sugar.

Take one cookie and place a dollop of jam in the middle. Top it with the 2nd cookie and press down gently.

Makes 60 individual cookies; 30 butterballs!
